Low Carb American Style Pancakes

Ingredients

  • 125g almond flour
  • 60-70ml water
  • 2 eggs
  • 1 tbsp honey/stevia blend (I used Whole Earth) or 1-2 tbsp sweetener
  • Dash of salt
  • 2-3 tsp of oil

Method

  1. Mix all ingredients together in a bowl until well combined. You should have a runny consistency. If the consistency is too thick, you can add more water.
  2. Heat the oil in a frying pan over a medium heat.
  3. Pour a large spoonful of the batter into the pan. Cook for approximately 1-3 minutes until bubbles are forming and the edge of the pancake begins to dry.
  4. Flip, and cook until browned on the other side. Repeat with remaining batter to serve 4-5 pancakes.
